Ingredients:
- 2 cups of cooked corn kernels
- Half cup of diced red bell pepper
- 1/4 cup of diced red onion
- 1/4 cup of chopped fresh cilantro
- 1 jalapeño pepper, seeded and finely chopped
- 1/4 cup of crumbled cotija cheese
- Juice of 1 lime
- 1 tablespoon of olive oil
- 1/2 teaspoon of chili powder
- Salt and pepper to taste
Instructions:
- Combine the cooked corn kernels, red bell pepper, red onion, cilantro, and jalapeño pepper in a large bowl.
- In a apart small bowl, combine the lime juice, olive oil, chili powder, salt, & pepper and whisk them together to create the dressing.
- Drizzle the sauce over the salad & toss to coat.
- Sprinkle with crumbled cotija cheese.
