Ingredients:

  • 2 cups of cooked corn kernels
  • Half cup of diced red bell pepper
  • 1/4 cup of diced red onion
  • 1/4 cup of chopped fresh cilantro
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup of crumbled cotija cheese
  • Juice of 1 lime
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of chili powder
  • Salt and pepper to taste

Instructions:

  1. Combine the cooked corn kernels, red bell pepper, red onion, cilantro, and jalapeño pepper in a large bowl.
  2. In a apart small bowl, combine the lime juice, olive oil, chili powder, salt, & pepper and whisk them together to create the dressing.
  3. Drizzle the sauce over the salad & toss to coat.
  4. Sprinkle with crumbled cotija cheese.
