Ingredients:

  • 1 cup of cooked quinoa
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup of Kalamata olives, sliced
  • 1/4 cup of diced red onion
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of lemon juice
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Combine the cooked quinoa, cherry tomatoes, cucumber, Kalamata olives, red onion & feta cheese in a large bowl.
  2. Combine the lemon juice, olive oil, chopped parsley, pepper in a small bowl, salt & whisk until well blended to create the dressing.
  3. Drizzle the sauce over the salad & toss gently to combine.
