Ingredients:
- 1 cup of cooked quinoa
- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup of Kalamata olives, sliced
- 1/4 cup of diced red onion
- 1/4 cup of crumbled feta cheese
- 2 tablespoons of lemon juice
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of chopped fresh parsley
- Salt and pepper to taste
Instructions:
- Combine the cooked quinoa, cherry tomatoes, cucumber, Kalamata olives, red onion & feta cheese in a large bowl.
- Combine the lemon juice, olive oil, chopped parsley, pepper in a small bowl, salt & whisk until well blended to create the dressing.
